Roasted Garlic

  • 1/2 garlic bulb per person
  • olive oil
  • salt
  • pepper
  • french bread, toasted dry in a toaster oven.
  1. Preheat the oven to 400 F.
  2. Pull all the cloves off the bulb and slice the top off each one, just enough to expose the flesh, but do not peel.
  3. Put a piece of aluminum foil into a small boil and buch the garlic cloves together in the centre with the cut ends up.  Drizzle with olive oil.  Season with salt and pepper.
  4. Close the foil and repeat with the remaining bulbs.
  5. Roast for 45 minutes.
  6. Squeeze the garlic out on to the crostini.
  7. Serve.
