Stuffed Courgette for Two

  • 1 zucchini
  • salt
  • 3 tbsp feta, crumbled
  • 2 tbsp gruyere, grated
  • 2 tsp flour
  • 1 tbsp fresh dill, minced
  • 1 garlic clove, crushed
  • 1/2 tsp pepper
  • breadcrumbs
  • butter
  1. Cook the zucchini and boiling salted water for 10 minutes.  Drain and let cool.
  2. Preheat broiler.
  3. Slice the zucchini in half lengthwise and scoop out the seeds.
  4. Combine the feta, gruyere, flour, dill, garlic, and pepper.
  5. Arrange the zucchini in an oven dish, cut side up.  Season lightly with salt.
  6. Spoon the mixture into the trough of the zucchini.
  7. Sprinkle with breadcrumbs and dot with a small amount of butter.
  8. Broil until the cheese is hot.  Serve.
