- 1/3 cup flour
- 1 tsp salt
- 1/2 tsp pepper
- 1 tbsp safflower oil
- 2 egg yolks, beaten
- 3/4 cup flat beer,
- 1 lb zucchini, sliced thick
- vegetable oil
- mayonnaise
- sambal oelek
- Combine the flour, salt, pepper, safflower oil, egg, and beer. Chill for 3 hours.
- Combine 1/4 cup of mayonnaise with 1 tsp sambal oelek. Chill.
- Heat around 2 cups of vegetable oil in a skillet to deep fry the zucchini. Check the heat by adding a cube of bread and seeing how quickly it burns.
- Dip the zucchini in the batter and then deepfry just until golden.
- Drain the slices on a paper towel.
- Serve with the mayo sauce.
