Zucchini Sticks with Chili Mayo

  • 1/3 cup flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp safflower oil
  • 2 egg yolks, beaten
  • 3/4 cup flat beer,
  • 1 lb zucchini, sliced thick
  • vegetable oil
  • mayonnaise
  • sambal oelek
  1. Combine the flour, salt, pepper, safflower oil, egg, and beer.  Chill for 3 hours.
  2. Combine 1/4 cup of mayonnaise with 1 tsp sambal oelek.  Chill.
  3. Heat around 2 cups of vegetable oil in a skillet to deep fry the zucchini.  Check the heat by adding a cube of bread and seeing how quickly it burns.
  4. Dip the zucchini in the batter and then deepfry just until golden.
  5. Drain the slices on a paper towel.
  6. Serve with the mayo sauce.
