- 3 1/3 cups flour
- 1/4 tsp salt
- 2 tsp baking soda
- 1 tsp baking powder
- 4 tsp cream of tartar
- 6 tbsp butter, diced

- Preheat the oven to 425 F.
- Combine the flour, salt, baking soda, baking powder, and cream of tartar in a large bowl.
- Mix in the butter until it gets a crumb like texture.
- Add the milk and stir briefly, just until mixed.
- Turn onto a floured surface and knead into a dough.
- Flatten the dough with your fists and cut out 10 to 12 squares.
- Lay the squares on parchment paper, on a baking sheet.
- Bake for about 10 minutes, until risen and golden.
- Meanwhile, whip the cream.
- Serve the scones buttered, with jam, and a dollop of whipped cream.
