English Scones

  • 3 1/3 cups flour
  • 1/4 tsp salt
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 4 tsp cream of tartar
  • 6 tbsp butter, diced
  • 1 1/3 cup milk
  • heavy cream
  • strawberry jam
  1. Preheat the oven to 425 F.
  2. Combine the flour, salt, baking soda, baking powder, and cream of tartar in a large bowl.
  3. Mix in the butter until it gets a crumb like texture.
  4. Add the milk and stir briefly, just until mixed.
  5. Turn onto a floured surface and knead into a dough.
  6. Flatten the dough with your fists and cut out 10 to 12 squares.
  7. Lay the squares on parchment paper, on a baking sheet.
  8. Bake for about 10 minutes, until risen and golden.
  9. Meanwhile, whip the cream.
  10. Serve the scones buttered, with jam, and a dollop of whipped cream.
