- 2 cups flour
- 1/4 tsp salt
- 1 tsp baking soda
- 1/2 cup melted butter
- 1 cup lightly packed brown sugar
- 2 eggs
- 1 1/2 tsp vanilla
- 3 tbsp rum
- 3 bananas, mashed
- 1/4 tsp cinnamon
- a pinch of mace
- a pinch of cloves
- 3 tbsp milk
- 1/2 cup walnuts, chopped
- 3/4 cup shredded coconut
- Preheat the oven to 325 F.
- Grease a 9 by 5 inch loaf pan.
- Combine the flour, salt, and baking soda. Stir in the butter, sugar, eggs, vanilla.
- Stir in the rum, bananas, and the spices. Mix in the milk and the nuts and the coconut. Stir well.
- Pour into the pan. Place in the oven and bake about 1 hour.
