No Milk Crepes

  • 1 egg
  • 1 cup water
  • 1/2 tbsp rum
  • 1/2 tsp vanilla
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 1 cup flour
  • 2 tbsp melted butter
  • the zest of 1 lemon
  1. Combine all the ingredients and mix well.
  2. Pan fry in butter.
  3. Serve with a fruit syrup.

No Egg Pancakes

  • 2 cups flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 3/4 cups milk
  • 2 tbsp melted butter
  • 2 tsp vanilla
  1. Mix together all the ingredients until just combined.
  2. Let rest 15 minutes.
  3. Pan fry in butter.
  4. Serve with syrup.

Not So Fluffy Pancakes

  • 1 1/2 cups flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 egg, beaten
  • 2 cups milk
  • 2 tbsp canola oil
  1. Combine all the ingredients and stir until just combined.
  2. Pan fry in butter on both sides.
  3. Serve with maple syrup.

Fluffy Waffles

  • 1 cup flour
  • 1 tsp baking powder
  • a pinch of salt
  • 2 eggs, separated
  • 1 tbsp sugar
  • 1 cup milk
  • 2 tbsp melted butter
  • 1/2 tsp vanilla
  1. Combine the flour, baking powder, and salt.
  2. Beat the 2 egg yolks with the sugar until yellowy and then beat in the milk, butter, and vanilla. 
  3. Stir in the flour mixture.
  4. Beat the egg whites to soft peaks and fold in.
  5. Spray the waffle iron with vegetable spray and preheat.
  6. Cook the waffles.
  7. Serve with a berry syrop.

Fluffy Pancakes

  • 3/4 cup flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tbsp sugar
  • a pinch of salt
  • 1 egg
  • 3/4 cup buttermilk
  • 2 tbsp butter, melted
  • 1/2 tsp vanilla
  1. Combine all the ingredients and stir until just combined.
  2. Panfry on the both sides in butter.
  3. Serve with syrup.

Buttermilk Pancakes

  • 1 cup flour
  • 2 tsp sugar
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 3/4 cup buttermilk
  • 1/4 cup milk
  • 1 egg
  • 2 tbsp melted butter
  • 1 tsp vanilla
  • vegetable oil
  1. Combine the flour, sugar, salt, baking powder, and baking soda. 
  2. Microwave the buttermilk and the milk to room temperature.  Whisk in the egg, butter, and vanilla.
  3. Add to the dry ingredients and whisk until just mixed.
  4. Heat some oil in a pan and fry small scoops of the batter on both sides until golden brown.
  5. Serve with syrup.

Buttermilk Pancakes

  • 1 1/2 cups flour
  • 2 tbsp sugar
  • 3 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 egg, beaten
  • 2 cups buttermilk
  • 1 tbsp canola oil
  1. Combine the flour, sugar, baking powder, and soda.  Stir in the salt.
  2. Mix in the egg, buttermilk and oil.
  3. Pan fry scoops of the batter on both sides until golden brown.
  4. Serve with butter and syrup.

Scottish Crumpets

  • 2 cups flour
  • 2 tbsp sugar
  • pinch of salt
  • 2 eggs, separated
  • butter
  • 15 oz. milk
  • strawberry jam
  1. Beat the egg yolks and stir in the flour, sugar, and salt. 
  2. Melt 2 tbsp of butter and add it to the yolk mixture.
  3. Beat the egg whites to soft peaks and then fold it into the yolk mixture.
  4. Melt a little butter in a skillet and panfry the batter, 1/4 cup at a time.
  5. Cook on both sides until bubbly and golden.
  6. Serve with butter and strawberry jam.

All American Pancakes

  • 1 1/2 cups flour
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 tbsp sugar
  • 2 eggs, beaten
  • 2 tbsp butter, melted
  • 1 1/3 cup milk
  • butter for frying
  • maple syrup
  1. In a blender, combine the flour, baking powder, salt, sugar, and eggs. Blitz and add the melted butter and the milk. 
  2. Heat a skillet and melt some butter in it.  Scoop out the pancake batter using a quarter cup measure.  Pour 1/4 cup into the pan and fry on both sides until golden.
  3. Serve with syrop.
