Banana Chocolate Chip Muffins

  • 2 very ripe bananas peeled, mashed
  • 1/4 cup sour cream
  • 1 egg
  • 1 tsp vanilla
  • 1 cup flour
  • 6 tbsp sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 5 tbsp softened butter
  • 1/2 cup pecans, chopped
  • 1/2 cup chocolate chips
  1. Preheat the oven to 350 F.
  2. Combine the bananas, sour cream, egg, and vanilla.
  3. Combine the flour, sugar, baking powder, soda, and salt.  Mix in the butter and half the banana mixture.  Beat 2 minutes and then fold in remaining banana mixture. 
  4. Fold in the chocolate and the nuts.  Spoon into a jumbo muffin tin.
  5. Bake for about 25 minutes.
