- 1 1/2 cups rolled oats
- 1 1/2 cups buttermilk
- 2 eggs
- 1/2 cup brown sugar, lightly packed
- 1/2 cup butter, melted
- 1 tsp vanilla
- 1 1/2 cups flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- a pinch of ground nutmeg
- 3/4 cup chocolate chips
- Preheat the oven to 400 F.
- Combine the oats and the buttermilk and allow to soak for 10 minutes.
- Combine the oat mixture, eggs, brown sugar, butter, and vanilla.
- Combine the flour, baking powder, soda, salt, nutmeg, and chocolate chips.
- Fold the mixtures together until just mixed and then spoon into a jumbo muffin tin.
- Bake about 20 or so minutes.
