Cherry Cupcakes

  • 1 3/4 cups flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter
  • 2/3 cup sugar
  • 1 egg
  • 1 1/2 tsp vanilla
  • 2 tbsp milk
  • 24 maraschino cerries, drained on paper towel.
  1. Line muffin trays with baking cups.  Preheat the oven to 400 F.
  2. Combine the flour, baking powder, and salt.
  3. Cream the butter and the sugar.  Beat in the egg, vanilla, milk, until well blended.
  4. Stir in the flour mixture and beat until smooth.
  5. Place 1 cherry in the bottom of each baking cup.
  6. Spoon the batter over the cherries.
  7. Bake about 10 to 15 minutes or so.
  8. Cool.  Frost with your favourite icing.
