Chocolate Bran Muffin

  • 1 cup flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups bran
  • 1/3 cup lightly packed brown sugar
  • 1/2 cup chocolate chips
  • 1 egg, beaten
  • 1 cup buttermilk
  • 2 tbsp canola oil
  1. Preheat the oven to 400 F.
  2. Combine the flour, baking powder, soda, and salt. 
  3. Blend in the bran, sugar, and the chocolate chips.
  4. Make a well and stir in the egg, buttermilk, and oil, only until moistened but still lumpy.
  5. Spoon into a jumbo muffin tin.
  6. Bake for about 20 minutes.
