Donut Muffins

  • 1/4 cup butter
  • sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 1 1/4 cups flour
  • 2 tsp baking powder
  • a pinch of salt
  • a pinch of nutmeg
  • 1/3 cup milk
  • 1 tsp cinnamon
  1. Preheat the oven to 375 and grease a muffin tin.
  2. Cream the butter with 6 tbsp of sugar.  Beat in the egg, vanilla, flour, baking powder, salt, nutmeg, and milk.  Mix until just blended.
  3. Spoon the batter into the prepared tin.
  4. Bake for about 15 to 18 minutes.
  5. Combine 1/2 cup sugar and the cinnamon.  Roll the muffins in the mixture.  Serve.
