Dr Pepper Cake

  • 1 1/3 cup flour
  • 1/2 cup sugar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 egg, beaten
  • 2 tbsp plain yogurt
  • 1/3 cup milk
  • 2 1/2 tsp vanilla
  • butter
  • 3 tbsp cocoa powder
  • dr pepper
  • icing sugar
  1. Preheat the oven to 350 F.
  2. In a large bowl combine the flour, sugar, baking soda, and salt. 
  3. In a smaller bowl, combine the egg, yogurt, milk, and 2 tsp vanilla.
  4. In a saucepan, melt 1/2 a cup of butter with 2 tbsp cocoa, and 3/4 cup dr pepper, heating on low.
  5. Pour the dr pepper mixture into the dry ingredients and then add the egg mixture, beating until well blended.
  6. Pour the cake into an 8" springform pan, lined with aluminum foil, and bake for 40 minutes, or until a toothpick can be pulled clean from the centre.
  7. Leave to cool 15 minutes and then unmold the pan. 
  8. Combine icing sugar, dr pepper, 1 tbsp cocoa, 1/2 tsp vanilla, and some butter to get a spreadable, but not runny, consistency for the icing. 
  9. Ice the cake.  Serve.
