Earl Grey Muffins

  • 2/3 cup milk
  • 2 tsp earl grey tea leaves
  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup melted butter
  • 1 cup sugar
  • 2 eggs
  1. In a saucepan combine the milk and the tea leaves and bring to a boil.  Remove from the heat, cover and let steep for 30 minutes.
  2. Preheat the oven to 350 F.
  3. Combine the flour, baking powder, salt, and sugar. 
  4. Stir in the butter, eggs, and then strain in the milk.
  5. Mix well until smooth.
  6. Spoon into cup lined muffin tin.
  7. Bake for 25 minutes.
