- 2 cups flour
- 2/3 cup sugar
- 2 tsp baking soda
- 1/4 tsp cinnamon
- 1/4 tsp salt
- 2 cups grated carrots
- 1/2 chocolate chips
- 1/2 cup chopped pecans
- 3/4 cup shredded coconut
- 1 granny smith apple, peeled, cored, shredded
- 2 eggs
- 2/3 cup canola oil
- 2 tsp vanilla
- Preheat the oven to 350 F. Line a muffin tin.
- Combine the flour, sugar, baking soda, cinnamon, and salt.
- Stir in the carrots, chocolate, pecans, coconut and apple.
- Whisk together the eggs, oil, and vanilla. Combine until just blended.
- Spoon into the cups.
- Bake about 30 to 35 minutes.
