Granny’s Tapioca Pudding

  • 1 cup large tapioca
  • milk
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1 1/2 tsp vanilla
  • 4 eggs, slightly beaten
  1. Soak the tapioca in 3 or 4 cups of water from 9 to 24 hours at room temperature.  Drain any leftover water.
  2. Preheat the oven to 375 F.
  3. Put the tapioca in a 3 quart casserole dish, that has been left ungreased.  Add 1 3/4 cups milk.
  4. Bake for 45 minutes.
  5. Add the sugar, salt, vanilla, eggs, and 1 1/2 cups milk.  Return to the oven.  Bake 45 minutes to 1 hour longer, until set and nicely brown.
  6. Serve this with cold milk or cream poured over it.
