Jam Muffins

  • 1 1/2 cups flour
  • 1/4 cup sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1 tsp vanilla
  • 1/4 cup butter, melted
  • 1 cup plain yogurt
  • 1/4 cup milk
  • jam
  • 1/4 cup pecans, chopped
  1. Preheat the oven to 425 F and grease a jumbo muffin tin.
  2. Combine the flour, sugar, baking powder, soda, and salt.
  3. Beat the egg, vanilla, butter, yogurt and milk together.  Stir into the flour mixture just until blended.  Fold in the nuts
  4. Spoon the mixture into a muffin tin, only filling up the tin half way.  Add 1 1/2 tsp of jam to each and then top with the remaining batter.
  5. Bake for about 18 minutes. Serve.
