- 1 1/2 cups flour
- 1/4 cup sugar
- 2 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 egg
- 1 tsp vanilla
- 1/4 cup butter, melted
- 1 cup plain yogurt
- 1/4 cup milk
- jam
- 1/4 cup pecans, chopped
- Preheat the oven to 425 F and grease a jumbo muffin tin.
- Combine the flour, sugar, baking powder, soda, and salt.
- Beat the egg, vanilla, butter, yogurt and milk together. Stir into the flour mixture just until blended. Fold in the nuts
- Spoon the mixture into a muffin tin, only filling up the tin half way. Add 1 1/2 tsp of jam to each and then top with the remaining batter.
- Bake for about 18 minutes. Serve.
