Poppsyseed Muffins

  • 1/4 cup canola oil
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 cup poppy seeds
  • 1 cup sour cream
  • 1/4 cup milk
  • 2 cups flour
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp salt
  1. Preheat the oven to 425 F.
  2. Cream the oil, sugar, and eggs.  Stir in the seeds.
  3. Mix in the sour cream, milk, flour, baking soda, baking powder, and salt.  Stir until just moistened and lumpy.
  4. Spoon into the muffin cups.  Bake for 15 to 20 minutes.
