Raspberry Chocolate Chip Muffins

  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 egg
  • 2 cups flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chocolate chips
  • raspberry jam
  1. Preheat the oven to 400 F.  Grease the bottom of a jumbo muffin tray.
  2. Beat the milk, oil, and egg together.  Stir in the flour, sugar, baking powder, and salt until just moistened.
  3. Fold in the chocolate chips.  Fill the muffin cups about 1/3 full.
  4. Place a spoonful of the jam in each one.
  5. Cover with the remaining batter.
  6. Bake for about 22 minutes.
  7. Serve.
