Pesto Eggs

  • 4 eggs, hardboiled, halved lengthwise
  • 1/4 cup basil, minced
  • 1/2 cup parmesan, grated
  • 3 garlic cloves, minced
  • salt and pepper
  • 1/3 cup olive oil
  1. Arrange the eggs on a platter.
  2. Combine the remaining ingredients in a food proccessor.  Puree until smooth.
  3. Spread the sauce over the eggs and let sit for 30 minutes.
  4. Serve.
