- 2 cans hominy, rinsed, drained
- 1/3 cup canned jalapenos, minced
- 3/4 cup sour cream
- 1/4 cup light mayonnaise
- salt and cracked pepper
- pepper jack, grated
- Preheat the oven to 350 F.
- Combine the hominy, jalapenos, sour cream, and mayo. Stir well. Season with salt and cracked pepper.
- Spread into a casserole dish.
- Top with grated pepper jack.
- Bake 25 to 30 minutes.
