Lebanese Rice Pilaf

  • 1/3 cup pine nuts
  • 1/4 cup vermicelli, broken into small pieces
  • 3 tbsp olive oil
  • 2 cups rice
  • 4 cups water
  • salt
  1. In a small skillet saute the pine nuts, and the vermicelli in the olive oil until golden.
  2. Wash the rice and then drain.  Place the rice in a large saucepan.  Add the water and season with salt.  Bring to a boil, reduce the heat and then simmer covered 10 minutes. 
  3. Add the noodles and pinenuts and return to a  simmer, covered another 10 minutes.
  4. Serve.
