Lime Coconut Rice

  • 1 cup rice
  • 1 cup coconut milk
  • 3/4 cup chicken stock
  • 1/4 tsp salt
  • the zest of 1 lime
  1. Combine the coconut milk and the chicken stock in a saucepan.
  2. Stir in the rice and the salt and bring to a simmer.
  3. Cover and cook on very low fo 15 minutes.
  4. Turn off the heat and let stand 5 minutes.
  5. Stir in the lime zest.  Serve.
