Marsala Pilaf

  • 2 tbsp butter
  • 1 cup rice
  • 1/3 cup marsala
  • 2 cups chicken stock
  1. Melt the butter in a saucepan.  Add the rice and stir for 4 minutes.
  2. Pour in the marsala and stir until evaporated.
  3. Add the chicken stock.  Stir.  Bring to a boil.
  4. Cover and then reduce the heat to very low.  Allow to simmer for 15 minutes.  Turn off the heat and let sit 5 minutes.
