Medieval Rice

  • 1 cup raw rice
  • 2 1/2 cups stock
  • 3 tbsp almonds
  • 1/2 tsp salt
  • a pinch of saffron
  1. Place all ingredients in a saucepan and bring to a boil. 
  2. Simmer for 15 minutes and then turn off the heat and let rest with the lid on for 5 minutes.
  3. Serve.
