Pine Nut Couscous

  • 1 tbsp butter
  • 3/4 cup chicken stock
  • salt
  • 1/3 cup couscous
  • 2 tbsp pine nuts
  1. Melt the butter in a saucepan.
  2. Add the chicken stock and bring to a boil.
  3. Stir in the couscous and season lightly.  Cover and turn off the heat and let stand 10 minutes.
  4. Stir in the pine nuts.  Serve.
