- 3 eggs
- 1/4 tsp curry powder
- 1/4 tsp paprika
- 1/4 tsp cayenne
- 1/4 tsp cracked pepper
- 1 tsp salt
- 2 cups cooked rice
- 1 scallion, minced
- butter
- sourcream
- Whisk eggs with seasoning.
- Stir in rice and scallion.
- Form into patties. Pan-fry in butter in a non-stick skillet.
- Fry until golden brown on both sides. Serve with sour cream.
