Rice Patties

  • 3 eggs
  • 1/4 tsp curry powder
  • 1/4 tsp paprika
  • 1/4 tsp cayenne
  • 1/4 tsp cracked pepper
  • 1 tsp salt
  • 2 cups cooked rice
  • 1 scallion, minced
  • butter
  • sourcream
  1. Whisk eggs with seasoning.
  2. Stir in rice and scallion.
  3. Form into patties.  Pan-fry in butter in a non-stick skillet.
  4. Fry until golden brown on both sides.  Serve with sour cream.
