- 4 chicken breasts, sliced in chunks large enough to skewer
- 3 tsp cayenne
- 1 tbsp paprika
- 3 garlic cloves, crushed
- 3 tsp dry oregano
- 1 tsp dry thyme
- salt
- white pepper
- 2 tbsp lime juice
- 2 tbsp olive oil
- 1/2 cup light sour cream
- 1 scallion, minced
- 1 jalapeno, minced
- 1/2 tsp dry mint
- 2 tbsp cilantro, minced
- Combine the cayenne, paprika, garlic, oregano, thyme, 1 tsp salt, 1/4 tsp white pepper, 1 tbsp lime jice, and olive oil in a bowl. Add the chicken and toss to coat. Cover and marinate overnight.
- Combine the sourcream, scallion, jalapeno, mint, 1 tbsp lime juice, and cilantro. Season lightly with salt and white pepper. Chill.
- Skewer the chicken and grill until cooked through.
- Serve with the sauce.
