Chicken Firesticks with Dipping Sauce

  • 4 chicken breasts, sliced in chunks large enough to skewer
  • 3 tsp cayenne
  • 1 tbsp paprika
  • 3 garlic cloves, crushed
  • 3 tsp dry oregano
  • 1 tsp dry thyme
  • salt
  • white pepper
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1/2 cup light sour cream
  • 1 scallion, minced
  • 1 jalapeno, minced
  • 1/2 tsp dry mint
  • 2 tbsp cilantro, minced
  1. Combine the cayenne, paprika, garlic, oregano, thyme, 1 tsp salt, 1/4 tsp white pepper, 1 tbsp lime jice, and olive oil in a bowl.  Add the chicken and toss to coat.  Cover and marinate overnight.
  2. Combine the sourcream, scallion, jalapeno, mint, 1 tbsp lime juice, and cilantro.  Season lightly with salt and white pepper.  Chill.
  3. Skewer the chicken and grill until cooked through.
  4. Serve with the sauce.
