Crispy Chicken

  • 6 pieces chicken
  • sea salt
  • cracked pepper
  • 1/2 tsp cayenne
  • 2 tsp dry mustard
  • the juice of 1 lemon
  • 1 tsp coriander
  • 1 tsp ground ginger
  • 1 tsp honey
  • olive oil
  • 1 egg
  • 1 tbsp soy sauce
  • 2 cups dry bread crumbs
  • flour
  1. Combine the cayenne, mustard, lemon, coriander, ginger, honey, and 2 tsp olive oil.  Mix well.
  2. Add the chicken and turn to cover.  Season with salt.  Cover with plastic wrap and chill 4 hours.
  3. Preheat the oven to 400 F.
  4. Combine the egg, 1 tsp olive oil, and soy sauce.
  5. Combine the bread crumbs with cracked pepper.
  6. Dredge the chicken in the flour.  Dip the chicken in the egg mixture, and then dredge in the crumb mixture.  Lay on a baking sheet, skin side up.
  7. Bake for 40 minutes.
