Grilled Cod with Tarragon Tartar

  • 1/4 cup mayonnaise
  • 1/2 tsp lemon zest
  • 1 1/2 tbsp horseradish
  • 1 scallion, minced
  • 1 tbsp capers, drained
  • 2 dashes tabasco
  • 1 tbsp minced fresh tarragon
  • kosher salt
  • cracked pepper
  • olive oil
  • 2 cod fillets
  1. Combine the mayonnaise, lemon, horseradish, scallion, capers, tabasco, tarragon, 1/4 tsp salt, and 1/4 tsp pepper.  Chill.
  2. Heat the grill.  Brush the fish with olive oil and season with salt and pepper.
  3. Grill the fish.  Serve with the tartar sauce.
