- 1/4 cup butter, melted

- Combine the cucumber, creme fraiche, scallion, lemon juice, 1/4 tsp salt, and 1/4 tsp cayenne. Chill.
- Season the halibut lightly with salt and cayenne.
- Grill the halibut, basting with butter.
- Sprinkle the halibut with paprika.
- Serve the halibut with the cucumber sauce.
