Herb Mustard Chicken Breasts

  • 2 chicken breasts
  • 3 tbsp white wine
  • 3 tbsp olive oil
  • 1 1/2 tbsp white wine vinegar
  • 1 scallion, minced
  • 1/2 tsp italian herbs
  • 1 clove garlic, crushed
  • cracked pepper
  • salt
  • 2 tbsp brown mustard
  1. Combine the wine, olive oil, vinegar, scallion, herbs, garlic, and some cracked pepper.  Mix in the mustard.
  2. Lay the chicken in the mixture and rub over both sides.  Cover and chill 4 hours.
  3. Discard the sauce.  Season the chicken with salt.  Grill until cooked.
  4. Serve.
