Jujube Cupcakes

  • 1 1/4 cups sugar
  • 1/2 cup butter
  • 2 eggs
  • 1 cup milk
  • 2 cups flour plus 1 tbsp
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 tsp vanilla
  • 1/2 cup jujubes, cut smaller
  1. Line a muffing tray with baking cups.  Preheat the oven to 400 F.
  2. Combine the sugar, butter, eggs and milk.
  3. Stir in the 2 cups of flour, baking powder, and salt.  Beat until smooth.  Add the vanilla.
  4. Toss the jujubes in the 1 tbsp of flour and then mix into the batter. 
  5. Spoon into the cups and then bake 14 to 16 minutes.
  6. Cool.  Ice with your favourite icing.
