Mushroom Beef in Port

  • 1 lb flank steak
  • 1/3 cup port
  • 1/2 lb whole button mushrooms
  • butter
  • 1 1/2 tbsp flour
  • 1/2 cup consomme
  • salt and pepper
  • 1 clove garlic, crushed
  1. Season the meat with salt and pepper.
  2. Melt 1 tbsp of butter in the skillet and brown the meat.
  3. Add the port and simmer until reduced by half.
  4. Transfer to a bowl.
  5. Add 1/2 tbsp butter to the skillet and stir in the flour.  Cook stirring 1 minute.
  6. Add consomme and bring to a boil, stirring.  Reduce the heat and then return the meat and the port to the skillet.
  7. Cover and simmer for 1 hour.
  8. Add the mushrooms and the garlic and cook 30 minutes.
  9. Check the seasoning.  Serve.
