Parmesan Oregano Chicken

  • 4 chicken thighs
  • 1/4 cup extra-virgin olive oil
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp dry oregano
  • 2 garlic cloves, minced
  • Salt and freshly ground pepper
  • 1 tbsp balsamic vinegar

  1. Preheat the oven to 400°. In a bowl combine the olive oil, oregano and garlic.Toss in the chicken and then lay skin side up in a baking dish
  2. Sprinkle on the parmesan to cover the garlic and then season with salt and pepper
  3. Place in the oven and roast for 1 hour.
  4. Remove from the oven and sprinkle with the balsamic vinegar.  Serve.
