Steak with Mousseline Sauce and Brussel Sprouts

  • 2 steaks
  • coarse salt and cracked pepper
  • 8 brussel sprouts
  • 3 tbsp white wine vinegar
  • 1/4 tsp pepper
  • 3 egg yolks
  • 1/4 cup butter, cut in small pieces
  • 1 tsp lemon juice
  • 1/2 cup milk
  • sea salt
  • paprika
  1. Rub the steaks with the coarse salt and ground pepper.  Heat the grill.
  2. Set some salted water to boil. 
  3. In a double boiler, reduce the vinegar to 1 tbsp.
  4. Thin the egg yolks with 1 tbsp of water. 
  5. Meanwhile start boiling the brussel sprouts.
  6. Pour the yolks into the vinegar, whisking continuously on moderate heat.  Add the butter bit by bit,still stirring until thickened.
  7. Grill the steaks to your taste, let rest.
  8. Cook the sprouts until just tender.
  9. Add the lemon juice, milk, sea salt to taste, pepper, and a sprinkle of paprika.
  10. Serve the steak with the brussel sprouts.  Pour the sauce on top of both.
