2 boneless, skinless chicken breast, cut into 1” pieces

½ cup plain yogurt

1 shallot, minced

2 cloves garlic, minced

½ piece ginger, minced

¼ tsp saffron mixed with 2 tbsp warm water

½ tsp lime zest

Sea salt

1 tsp ground coriander
-
½ tsp ground cumin
-
½ tsp cayenne
-
½ tsp turmeric

½ tsp white pepper

Combine all the ingredients, except the chicken well. Season with 1 tsp salt.

Add the chicken to the marinade and coat well. Chill 8 hours.

Heat grill. Skewer the chicken, season with salt and pepper.

Grill about 3 minutes each side or until just cooked through.
