Tandoori Chicken Breasts

  • 2 boneless, skinless chicken breast, cut into 1” pieces
  • ½ cup plain yogurt
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • ½ piece ginger, minced
  • ¼ tsp saffron mixed with 2 tbsp warm water
  • ½ tsp lime zest
  • Sea salt
  • 1 tsp ground coriander
  • ½ tsp ground cumin
  • ½ tsp cayenne
  • ½ tsp turmeric
  • ½ tsp white pepper

 

  1. Combine all the ingredients, except the chicken well.  Season with 1 tsp salt.
  2. Add the chicken to the marinade and coat well.  Chill 8 hours.
  3. Heat grill.  Skewer the chicken, season with salt and pepper.
  4. Grill about 3 minutes each side or until just cooked through.
