Angel Hair Pasta All’Amatriciana

  • 4 slices bacon, diced
  • 1/2 cup dry white wine
  • 2 medium tomatoes, diced
  • salt and cracked pepper
  • 3/4 lb angel hair pasta, uncooked
  • 1/2 cup parmesan, grated
  • 2/3 cup cheddar cheese, grated
  1. Fry the bacon in a dutch oven.  Drain the fat away.
  2. Add the wine and reduce for a few minutes.
  3. Add the tomatoes.  Season with salt and pepper
  4. Cook for 20 to 30 minutes.
  5. Boil the pasta according to directions.
  6. Stir the cheeses into the sauce until melted.
  7. Toss with pasta.  Check seasoning.
  8. Serve.
