Cheddar Garlic Spaghetti

  • 1/2 lb spaghetti, uncooked
  • 4 eggs, beated
  • 1 tbsp butter
  • 2 tbsp parsley, minced
  • 2 cloves garlic, crushed
  • 1 shallot, minced
  • 1 tsp sea salt
  • 1/2 tsp cracked pepper
  • 1 cup cheddar cheese, grated
  1. Boil the noodles in salted water.
  2. On low heat, melt the butter in a dutch oven.
  3. Saute the garlic, parsley, and shallot until tender.  Season with salt and pepper.
  4. Pour in the eggs.  Stir in the cheddar.
  5. Toss in the noodles.  Serve.
