Mom’s Mac and Cheese

  • 2 cups uncooked macaroni
  • 1 tbsp butter
  • 2 tbsp flour
  • 1 cup milk
  • 1/4 lb cheddar, grated
  • 1 cup swiss cheese, grated
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • paprika
  1. Boil the macaroni in salted water for about 6 minutes.  Drain.  Rinse with cold water, and then drain again,
  2. Preheat the oven to 350 F.
  3. Melt the butter in a saucepan.  Add the flour and stir.
  4. Whisk in the milk, and then stir until it thickens.  Add the cheeses and stir until they melt.
  5. Season with salt, and pepper.  Mix in the macaroni.
  6. Pour the macaroni into a 2 quart casserole dish.  Sprinkle with paprika.
  7. Bake uncovered for about 25 minutes.
