Smoked Gruyere Tomato Fusili

  • 3 tbsp butter
  • 1/2 onion, minced
  • 2 tbsp flour
  • 2 large tomatoes, diced
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp cracked pepper
  • 1/4 tsp cayenne
  • 1/2 lb uncooked fusili
  • 1/2 cup smoked gruyere, grated
  1. Melt the butter in a large non-stick saucepan.  Add the onion and saute until tender.  Add the flour and stir for 1 minute.
  2. Stir in the tomatoes and the milk.  Season it with salt, pepper, and cayenne.
  3. Simmer for 30 minutes on low heat.
  4. Cook the fusili is boiling salted water.
  5. Stir the fusili and the gruyere into the pasta.  Serve.
