Tomato Cheese Bread Pudding

  • 2 cups canned tomatoes, mashed
  • 1/2 onion, minced
  • 1 tbsp butter, melted
  • 1 tsp sea salt
  • cracked pepper
  • 1/2 tsp dry basil
  • 4 slices white bread, crusts removed, cubed
  • 2 eggs, beaten
  • 3/4 cup mozzarella, grated
  1. Preheat the oven to 375 F.
  2. Combine the tomatoes, onion, butter, salt, pepper to taste, basil, eggs and bread cubes. 
  3. Spoon into a greased 2 quart baking dish.  Sprinkle with the cheese.  Set the dish in a bain marie.
  4. Bake for 40 minutes.  Serve.
