Tomato Ricotta Pasta

  • 1/2 lb fettucine, uncooked
  • 1/2 cup ricotta cheese, at room temperature
  • 1/4 cup parmesan, grated
  • 1/4 cup butter, melted
  • 2 large plum tomatoes, diced
  • 1 tsp dry basil
  • 3/4 tsp salt
  • 1/2 tsp cracked pepper.
  1. Boil the pasta in salted water.  Drain.
  2. Meanwhile combine the remaining ingredients and then toss with the pasta.  Check the seasoning.
  3. Serve.
