- 2 chicken breasts, sliced
- olive oil
- 1 cup bean sprouts
- 1/2 a cucumber, julienned
- 1 cup snow peas
- peanuts, crushed
- salt and pepper
- rice noodles
- 1 clove garlic, sliced
- 3 tablespoons sugar
- 2/3 cup warm water
- 1 1/2 tablespoons fresh lime juice
- 5 tablespoons fish sauce
- 2 tablespoons finely shredded carrots for garnish
- In a bowl, combine the garlic, sugar, water, lime juice, fish sauce, and carrot. Chill.
- Steam the snow peas until they are tender crisp.
- Cook the noodles according to directions.
- Heat 1 tbsp of olive oil in a non-stick skillet. Saute the chicken breast strips. Season them with salt and pepper.
- Divide the beansprouts, cucumber, and snow peas between 2 large bowls.
- Lay the cooked noodles on top and then add the chicken.
- Garnish with some crushed peanuts.
- Serve with the sauce.
