Avocado Vinaigrette

  • 3 garlic cloves, peeled
  • 1/2 of an avocado, peeled, pitted
  • 1/3 cup parsley
  • 1/4 cup cider vinegar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup olive oil

Combine all in a blender.  Process until smooth. Serve on romaine lettuce with cucumber and radishes.
