Kale and Arugula Salad

  • 1 tbsp sesame seeds
  • 2 cups kale leaves,washed, and chopped
  • 1/8 tsp kosher salt
  • 1 avocado, diced
  • the juice of half a lime
  • 1 cup arugula leaves
  • 1 tbsp cilantro, diced
  • 1/2 tomato, diced
  • 6 green olives, minced
  1. Toast the sesame seeds briefly and place in a large bowl.  Add the tomato, salt, and kale.
  2. Knead the kale with the salt until wilted.
  3. Toss in the remaining ingredients.
  4. Serve.
