1/2 lb green beans, trimmed
1/2 onion, peeled, left whole
3 sprigs parsley
5 garlic cloves, peeled, whole
olive oil
2 tsp white vinegar
sea salt
Combine the beans, onion, parsley, garlic, and 2 tbsp olive oil in a large pot with boiling water. Simmer for 20 minutes.
Drain.
Discard the onion and garlic.
Toss the garlic and beans with 1 tbsp olive oil. Season with salt. Sprinkle with vinegar. Serve.

4 oz bacon,diced
1 habanero, minced
6 cloves garlic, sliced
1 onion, minced
1 yellow bell pepper, minced
2 tsp cumin
2 bay leaves
3/4 cup dry sherry
1 smoked ham hock
2 cups canned black beans, rinsed, drained
10 cups beef stock
sour cream
sea salt and cracked pepper
Saute the bacon in a dutch oven until crisp and then stir in the habanero, garlic, onion, and yellow pepper. Saute until tender.
Stir in the cumin, bay leaves and sherry. Bring to a simmer and sprinkle in cracked pepper.
Add the ham hock and the beans and pour in the beef stock.
Bring to a low boil, cover partially and simmer 1 hour.
Season to taste.
Serve with a dollop of sour cream.

1 lb fresh green beans, trimmed
olive oil
coarse kosher salt
cracked pepper
Preheat the oven to 425 F.
Lay the beans on a large baking sheet.
Drizzle with olive oil.
Sprinkle with the salt and the cracked pepper.
Roast for about 10 to 15 minutes.
Serve.

10 button mushrooms
3 cups fresh green beans, trimmed
1/2 cup sour cream
salt and cracked pepper
butter
Melt 2 tbsp of butter in a skillet. Add the whole mushrooms and saute until tender.
Meanwhile, steam the green beans until tender.
Add the beans to the mushrooms. Stir in the sour cream.
Do not allow it to come to a boil. Season with salt and pepper. Serve.
