  • 1/3 cup light mayonnaise
  • 3 tbsp rice vinegar
  • 1 tbsp olive oil
  • 1 tbsp pickled ginger, minced
  • sea salt and cracked pepper
  • 1bunch broccoli, sliced into small pieces, stem trimmed and sliced as well
  • 1 carrot, peeled, julienned
  • 1 scallion, minced
  • 3 tbsp cilantro, chopped
  • 1/4 cup salted roasted peanuts
    1. Combine the mayo, vinegar, olive oil, and ginger.  season with salt and pepper.
    2. Stir in the broccoli, carrot, scallion, cilantro, and peanuts.
    3. Check seasoning. Serve.

  • 1 bunch broccoli, washed, cut into florets
  • olive oil
  • kosher salt
  • cracked pepper
  • dry rosemary
    1. Preheat the oven to 450 F. Place the broccoli on a baking sheet and drizzle with olive oil.
    2. Season with the salt and pepper.  Toss well.
    3. Sprinkle with the rosemary.
    4. Place in the oven and roast for about 15 minutes.

  • 1/2 head broccoli, cut in florets
  • salt
  • cracked pepper
  • 1/4 cup heavy cream
    1. Boil the broccoli in salted water until very tender, about 6 or 7 minutes.
    2. Drain.
    3. Heat the heavy cream.
    4. Put the drained broccoli in a food processor and pour in the cream.
    5. Season with salt and pepper.
    6. Process until smoothe.
    7. Serve.

  • 2 chicken breasts, sliced
  • peanut oil
  • salt and pepper
  • rice noodles
  • broccoli florets
  • 1/2 cup bean sprouts
  • 1/2 cucumber, julienned
  • 1 carrot, grated
  • ground salted peanuts
  • romaine lettuce, sliced
  • 2 tbsp nuoc nam fish sauce
  • 6 tbsp water
  • 1/4 cup rice wine vinegar
  • 3 tbsp white sugar
  • 1/2 tsp sambal oelek
  • juice of half a lime
    1. Combine the fish sauce, water, vinegar, sugar, sambal oelek and the lime juice.  Stir in the carrot.  Set aside.
    2. Divide the sliced lettuce between 2 large bowls.  Arrange half the cucumber and the beansprouts in each.
    3. Steam or boil the broccoli until crisp tender and cook the noodles according to directions.
    4. Heat some oil in a skillet and saute the chicken.  Season with salt and pepper.
    5. Drain the broccoli and the noodles and divide between the 2 bowls.  Sprinkle with the peanuts.
    6. Lay the chicken on top and serve with the reserved sauce.

  • 1/2 onion, minced
  • 1 medium carrot, peeled, diced
  • 1 stalk celery, minced
  • 3 garlic cloves, crushed
  • 2 cups broccoli, chopped
  • salt
  • 1/2 tsp cayenne
  • 1 cup macaroni, cooked
  • 4 cups chicken stock
  • 1/2 cup light cream
  • cracked pepper
  • creme fraiche
    1. Combine the vegetables in a large pot with the stock.  Bring to a boil and then simmer 20 minutes.
    2. Transfer to a food processor and puree until smooth.
    3. Return to the pot and stir in the salt to taste and the cayenne.
    4. Add the macaroni and the cream and heat through. 
    5. Check the seasoning.
    6. Serve with cracked pepper and a dollop of creme fraiche.
