2 halibut fillets
1/4 cup cucumber, shredded
5 tbsp creme fraiche
1 scallion, minced
2 tsp lemon juice
salt
cayenne
1/4 cup butter, melted
paprika
Combine the cucumber, creme fraiche, scallion, lemon juice, 1/4 tsp salt, and 1/4 tsp cayenne. Chill.
Season the halibut lightly with salt and cayenne.
Grill the halibut, basting with butter.
Sprinkle the halibut with paprika.
Serve the halibut with the cucumber sauce.

1 2/3 cup brown sugar
2 eggs, beaten
1 tsp vanilla
4 oz. bittersweet chocolate, melted
1 1/3 cup flour
1 tsp baking soda
1 cup plus 2 tbsp boiling water
creme fraiche
Preheat the oven to 375 F.
Grease and line a 9" by 5" loaf pan with parchment paper, and set on a baking sheet.
Cream 1 cup of butter with the sugar and add the eggs. Stir in the vanilla, beating well.
Fold in the chocolate.
Alternating with spoonfuls of the boiling water, add the flour and the baking soda.
Pour into the loaf pan and bake for 30 minutes.
Turn down the heat to 325 F and cook 15 minutes longer. The cake will still be quite soft in the middle.
Cool completely. Serve with a dollop of creme fraiche.
Heat the oil in a dutch oven. Saute the onion and the garlic until tender. Add the squash and cook for 6 minutes.
Pour in the stock and bring to a boil. Season with salt and pepper. Add the ginger and bay leaves. Add the lemon juice. Simmer, covered for 20 minutes. Discard the bay leaves.
Pour the mixture into a blender, (do it by halves if necessary) and puree until smooth.
Return the liquid to the pot. Stir in the milk and heat through. Add the cream and check the seasoning.
