Pineapple Mint Fizz

1 cup tequila 1 ½ cups pineapple juice, unsweetened 1 ½ cups lemon-lime soda ¼ cup minced mint leaves Crushed ice   Combine the tequila, juice, soda, and mint in a pitcher.  Pour over crushed ice.  Serve.

Mulled Apple Cider

1 qt apple juice 1 tsp allspice 8 whole cloves 1 stick cinnamon a few grains of salt 1/4 cup brown sugar, packed Pour the juice into a large saucepan. Stir in the spices, salt and sugar. Cover and heat very slowly to the boiling point for about half an hour. Remove the heat, strain and serve.

Pina Colada

2 cups pineapple juice 1 cup coconut milk 1/4 cup heavy cream 8 ice cubes rum Combine the juice, milk, cream and ice in a blender and blitz until smooth. Stir in rum to taste. Serve over more ice.

Pineapple Lassi

2 cups pineapple juice 1 cup plain yogurt 1 tsp fresh ginger, grated a pinch of ground cardamom a pinch of salt 3 tbsp sugar 8 ice cubes Combine all the ingredients in a blender. Puree until smooth. Serve.

Banana Cardamom Shake
