½ tbsp capers, drained

Olive oil

½ red chilli, seeded, minced

2 belgian endives

Juice of half a lemon

Sea salt and cracked pepper

 

Put the garlic, capers, chilli and 2 tbsp of olive il in a skillet on low heat.  Cook 1 minute.  Add the endives and 150 ml water.  Cover with parchment paper and cook on low for 30 minutes.  Squeeze with lemon juice.  Season and serve.

  • 6 oz. cream cheese
  • 1/3 cup heavy cream
  • cayenne
  • salt
  • cracked pepper
  • 1 tsp dijon
  • 1 tsp worcestershire sauce
  • 1/2 cup walnuts, chopped
  • 20 belgian endive leaves
    1. Mash the cream cheese with a fork.  Add the cream and stir well.  Add the dijon and worcestershire sauce.
    2. Season with the salt, cayenne, cracked pepper.
    3. Mix in the walnuts.
    4. Put a dollop of the mixture on each leaf.  Chill. Serve.

  • 1 8-ounce package cream cheese, room temperature
  • 1/2 cup minced fresh dill
  • 2 scallions, finely chopped
  • 1 teaspoon (packed) grated lemon peel
  • 4 Belgian endives
  •  8 ounces smoked salmon fillets, broken into 1-inch pieces

    1. Mix first 4 ingredients in small bowl. Season with freshly ground black pepper. (Can be made 2 days ahead. Cover; chill. Bring to room temperature before using.)
    2. Separate endive into leaves. Spread small amount of cheese mixture on base end of each leaf. Top with salmon piece. Arrange filled leaves on platter. (Can be made 6 hours ahead. Cover; chill.)

      Makes about 34.

  • 4 belgian endives
  • juice of 1/2 a lemon
  • butter
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup water
  • 1/2 tsp sugar
    1. Place the endives in a heavy skillet.
    2. Add the lemon juice, 1tbsp butter, salt, pepper, water, and sugar.
    3. Cover and boil on medium-low for 20 to 25 minutes
    4. Drain and serve with butter.

  • 1/4 cup coarsely chopped walnuts
  • 6 small heads belgium endives, washed and separated into leaves
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 garlic clove, crushed
  • 1/4 tsp salt
  • 1/4 tsp black pepper
    1. Pre-heat the oven to 375 F. Spread the nuts on a baking sheet and toast about 5 minutes.
    2. Whisk the olive oil with the vinegar, garlic.  Season with salt and pepper to taste.
    3. Arrange the endive leaves on a large plate or individual plates.  Sprinkle on nuts.
    4. Shake the dressing over the leaves.
    5. Serve.
